Get your pastry on!


Just a few notes from the kitchens..



Get your quiche on

We made a selection of different quiches and tarts, 
using a hazelnut short pastry.
Quiche Lorraine- made with bacon, onion, grated cheese.
Quiche Florentine- made with bacon, onion, spinach and cheese. 
Onion Tart - Heaps of Onion and cheese.
And of course they all have a savoury custard. 

I was never a big quiche fan because of the texture,
I found it to be too much like a bad custard tart.
BUT THESE!
Holy crap, ate a whole quiche.
AMAZING!
Using Gruyere cheese and adding more eggs and less milk/cream
adds a hole lot more quality,
and just makes it AWESOME! 




Crumbles today

Made some sweet things.. 
Crumbles and Tarts.
Apple Crumble- Made with Apples, Cinnamon, Sultanas
Pear and Macadamia Crumble- Golden Syrup, Pear, Crushed Macadamia
Calvados and Apple Tart- Apple, Marzipan, Calvados (alcohol) 
Quark and Cherry Tart- Quark (bakers cheese), Sour Cherry
Quark and Rhubarb- Quark, Rhubarb. 

All made with a sweet short pastry. 
So much work to do this many different types.
We made over a 100.
My favorite was the Pear and Macadamia Crumble.
Quite sweet but had this almost Christmas-y taste. 





That's one nice looking Linzer Slice

Linzer is my worst enemy. 
Cook too long goes dry.. 
Learnt this the hard way. 
You have to almost under cook it, well at least it looks like it.
But in the end (the 2nd try) it ended up nice. 
Creamy and super sweet from the jam,
Not to mention its cute with little heart shaped jam windows.

Strudel Making Time

Apple Strudel made with puff pastry..
HAND MADE PUFF PASTRY!
Super pain in the ass.



Quick before it gets eaten!

We finished it with a jam glaze and melted fondant with almonds..
